• Vegetable soup with black beans

    Ingredients

    1 cup Black beans
    1 small Onion
    2 cloves Garlic
    4 medium Carrot
    4 medium Celery
    .5 large Red pepper
    .5 large Orange pepper
    2 cups Cabbage
    2 cups Broccoli
    2 cups Mushrooms
    1 can Canned tomatoes
    8 cups Vegetable broth
    1 tbsp. Coconut oil
    1 teaspoon Thyme
    3 tablespoons Tamari
    1 teaspoon Liquid smoke
    1 ounce Peccorino romano
    2 tsp. Ground Pepper

    Method

    1. Soak beans in water in the fridge overnight.

    2. Mince garlic.

    3. Chop remaining vegetables.

    4. Finely shred cheese.

    5. In a stockpot, saute all vegetables in 1 tablespoon of the coconut oil until soft.

    6. Drain beans.

    7. Add beans, tomatoes, and vegetable broth to stockpot; simmer for 30 minutes.

    8. Season with tamari and liquid smoke.

    9. Serve soup topped with cheese.

    10. Serve alongside whole grain wheat bread for a complete protein source.
